The Perfect Food
I bought a > grill pan (Calphalon, really expensive) at Target last fall. It came with a panini press and I've been experimenting with that sandwich form ever since. Here's one of the favorite results from my searches.
Club Panini Recipe
Makes 4
1 cup mayo
1/4 cup fresh chopped herbs such as parsley, basil or chives
12 slices Smoked Turkey Breast
8 slices Swiss Cheese
16 slices Thick Cut Bacon, cooked and drained
1 tomato, cut into 2 slices per sandwich
8 slices sourdough or Tuscan bread
3 tablespoons butter, softened
Combine mayo and herbs; set aside.
Place 3 turkey slices, 2 cheese slices, 4 bacon slices and 2 tomato slices on half of the bread slices. Spread remaining bread slices with mayo mixture; place, mayo sides down, on tops of sandwiches.
Spread the outsides of sandwiches with butter.
Brown in a skillet on medium heat until lightly brown on both sides with a brick covered with foil or a panini weight on each sandwich. Toast until brown on each side, add the weight back after you turn the sandwich.
When I was last in Italy, the bar owners called these "toasties," and that is what you should ask for when you are wandering around at night looking for a bite to eat after the restaurants have closed.
Comments
The are generally ham and cheese in Amsterdam bars, but they are still called "toasties".
