Jiggle
It's probably a function of my Minnesota upbringing, but I have a real jones for Jello. It was practically a food group in my household. I also love pomegranite and cranberry juices and go through gallons of the latter each week. These are good ways to get the electrolytes I need to assist in my recovery from acute pancreatitis. Here is a way to combine two of my favorite foods.
Fruit Juice Shapes
4 cups pure grape juice, pure white grape juice, cranberry juice cocktail or other clear juice.
4 envelopes unflavored gelatin
In a large bowl, sprinkle the gelatine over 1 cup of the juice and allow to stand for a few minutes. Meanwhile, heat the remaining 3 cups of juice until just boiling and pour it over the juice and gelatin mixture. Stir until the gelatin is dissolved.
Pour into a 9 by 9-inch pan and chill until firm, about 3 hours or overnight. Dip the pan briefly into hot water to loosen, cut into squares or shapes, and serve.
I make these in single serving closed containers so that I always have a few in the fridge. If you want to use a milder flavored juice like apple, you'll probably need to add sugar. This is also a great way to get some fruit juice into the kids. Red grape juice is also a good source of resveratrol (as is red wine, but that gives me migraines.) This is a substance which may be a useful way of preventing influenza.
